Easy and Cozy January Recipes

Easy recipes to make in a big batch so you can stay snuggled under a blanket all month and always have a delicious, heart-warming meal waiting for you in the fridge! After the holidays, all I want to do is hibernate. I’ve done enough merry making, enough planning, enough cleaning – it’s time to hunker down, cozy up and spend just one more day in the kitchen cooking fabulously delicious soups, stews and shepherd’s pies to last me the entire month!

The recipes you’ll find on this list are all you need to make every dinner (or lunch!) easy, exquisite, and healthy too!

A Helpful Freezing Tip!

If you really want to make these recipes last throughout the month, here’s a helpful tip! Just about everything on this list can be easily frozen, but you won’t want to freeze them in one big chunk – you don’t want to have to take an ice pick to a beef bourguignon, and you may not want to waste a whole box of plastic baggies portioning them out.

I use these fantastic big silicone molds that make perfect meal-size cubes of stews, chilis and soups! All you have to do is pop a cube out into a bowl, and microwave for about 5-7 minutes!

I spend a day making about 5 different recipes that I can just stack in my freezer and always have something amazing to eat, all month long!

1. Lamb Stew with Red Wine
