Ingredients

  • 1 gruyère
  • 1 sheet puff pastry
  • ¼ cup raspberry preserves
  • ¼ cup shaved almonds
  • 1 egg - beaten
  • flour   - for sprinkling surface

Instructions

  • Preheat oven to 375 F. Lay 1 sheet of puff pastry down on a flour-sprinkled flat surface. You might want to pull and flatten it a bit more than it already is. You don't want the pastry to be too thick.
  • Spoon about ¼ cup of raspberry preserves in a little circle in the center that’s the size of your Gruyère. Sprinkle a small handful of shaved almonds on the preserves.
  • Place the Gruyère right on top of your tasty little mess and pull the puff pastry sides up to make a little package around the Gruyère.
  • Flip your wrapped Gruyère over so the top is the side with no seems. Place your little cookie cut shapes on top, and brush the entire thing with a beaten egg. Place on a baking sheet or oven-safe dish. Bake for 20-25 minutes. Let sit for 5 minutes and serve.
