- 1 gruyère
- 1 sheet puff pastry
- ¼ cup raspberry preserves
- ¼ cup shaved almonds
- 1 egg - beaten
- flour - for sprinkling surface
Preheat oven to 375 F. Lay 1 sheet of puff pastry down on a flour-sprinkled flat surface. You might want to pull and flatten it a bit more than it already is. You don't want the pastry to be too thick.
Spoon about ¼ cup of raspberry preserves in a little circle in the center that’s the size of your Gruyère. Sprinkle a small handful of shaved almonds on the preserves.
Place the Gruyère right on top of your tasty little mess and pull the puff pastry sides up to make a little package around the Gruyère.
Flip your wrapped Gruyère over so the top is the side with no seems. Place your little cookie cut shapes on top, and brush the entire thing with a beaten egg. Place on a baking sheet or oven-safe dish. Bake for 20-25 minutes. Let sit for 5 minutes and serve.
