Spicy Deviled Eggs with Chipotle

These gorgeous, spicy deviled eggs are delicately seasoned with cayenne pepper, Spanish smoked paprika and chipotle chili pepper and garnished with a few, bright, edible marigold petals – making them the prettiest appetizers at your next, colorful Autumn cocktail party!

Equipment

  • 1½ quart pot to boil 6 eggs
  • cutting board and sharp knife
  • small mixing bowl
  • mesh strainer
  • pastry piping bag and tip

Ingredients

  • 6 large eggs
  • 1 tbsp. mayo
  • 1 tsp. spicy brown mustard
  • 1 tsp. sour cream
  • tsp. chipotle pepper
  • tsp. cayenne pepper
  • smoked paprika - just a dash
  • salt & pepper - to taste
  • poppy seeds - for garnish
  • marigold petals - optional

Instructions

  • Add 6 large eggs to a pot of cool water, just covering the eggs, then place them on the stove and boil them for 20 minutes over MEDIUM-HIGH heat. After 20 minutes, place them in a bowl of cold water for 5-10 minutes.
  • Once the eggs are cool, remove the shells by carefully tapping around the center and peeling. Crack and peel very carefully so the egg is pristine and free of tears and dents.
  • Slice them carefully in half through the center. Slice a little bit off the bottom so they sit flat on a surface without sliding around.
  • Remove the yolks by simply sliding them out, or using a very tiny spoon, making sure to keep the whites free from rips or dings. Set them aside. 
  • Push the yolks through a mesh strainer into your mixing bowl. This will ensure your egg filling is creamy and smooth without any eggy chunks.
  • Mix your egg yolks, 1 tbsp. mayo, 1 tsp. sour cream, 1 tsp. spicy brown mustard, ⅛ tsp. cayenne pepper, ⅛ tsp. chipotle pepper and a sprinkle of Spanish smoked paprika. Mix the ingredients carefully, making sure your consistency isn't too runny. Depending on the size of your eggs, your filling may seem a little dry, so you may have to add a little more mustard or mayo. You want your consistency to be similar to hummus.
  • Add the filling to your pastry piping bag and fill your eggs. Garnish your eggs with cayenne and chipotle pepper, as well as a few poppy seeds and marigold flower petals (optional).
