This little Irish Coffee Drop is a perfect St. Patrick’s Day after-dinner drink.
When I was in college, I went through a phase where I drank nothing but Baileys. My friends and I befriended a local bar tender, and he would let me drink it for free. There were nights where I think I drank an entire bottle. All 5 million calories of it! I know… but I was 21.
I’ve grown up a bit since then.
I have expanded my cocktail pallet a bit and if I drink Baileys, I like to dress it up a bit. If you’d like to give your Bailey’s a little chocolatey, coffee kick, help yourself to this delicious Irish Coffee Drop.
You can use any chocolate syrup for the rim, but I got mine from Hop Kiln – a little vineyard in Sonoma, California. It’s a raspberry Pinot Noir chocolate sauce!

Chocolate Irish Coffee Drop
- 1 ounce Baileys
- ½ ounce Coffee Liqueur
- Drizzling chocolate for your rim
- First, rim your glass with chocolate. Pour your ingredients into a shaker over ice. Shake and pour.
